A House Warming Promise

Many many months ago, I made a promise to Borat and Latin Hips, the day they move into their new place and invite us for a house warming, I will make them a Greek Coconut Tart.  I haven't made this since college days (as in more than a decade ago, since I graduated in 2005).  Damn, I'm getting old.


So back to the tart, I never had a chance to buy the ingredients beforehand, as Husband had a market in Wellington (thank heaven we slept over at Froggie's place) on Friday and Saturday.  The reason I mention that is I got my hands on 4 different types of smoked salt (thank you Ronel) at that market, so all I can say is:  "Watch this space."  Interesting recipes are coming in the future.  And yes, she did say I'm allowed to mention her by name.  You can find her facebook link here.

But back to the tart, we were invited for a Sunday lunch, as their house is a little small to accommodate the horde of 50 couples that they know.  With Kitten hot on my heels, meowing for his usual morning treats, I shuffled to the kitchen, daring to hope that I have everything I need for the tart.

Mind you, I had to scrape very hard to get the last gram of butter to have enough, but I'm not complaining.  Everyone loved it, so the effort was well worth it.  All I could think was "Thank heaven I wanted to make date balls".  That was my saving grace, as that is the only reason I had coconut in the house.


An hour later, the tart came out of the oven, and the hot syrup
was poured over.  Another hour later after cooling a bit, Husband and I were dashing out the house, late as we so often are.  Even though this tart caused us to pick up weight, it was so worth it.  At least we didn't gain more than we lost the previous week.  See, coconut isn't fattening at all ;)

  1. I finally get around to reading your blog and I discover that "Borat" and I got an honourable mention! The tart was insanely tasty and we feel so honoured that you made it for us, late or not :P xxx
