Beignets. Fluffy little pillows of sugar and happiness. The Original and the Blog.
10g Yeast
375ml Luke Warm Water
100g Sugar
1tsp Salt
2 Eggs
250ml Evaporated Milk
840g Flour (7 cups)
60g Butter
- Mix the yeast and water.
- Add the sugar, salt, eggs and evaporated milk and mix well.
- Add 480g flour (4 cups), and mix smooth. I'll be honest, I just add all the flour and the butter and mix it in the mixer with the dough hook. But for those that don't have one, mix in the 4 cups.
- Add the butter and mix smooth.
- Add the rest of the flour, and mix smooth (betcha wish you had a mixer now, don't you?)
- Roll out a handful of dough at a time into a squarish sheet of about 2-3 mm. Cut in squares as big as you want, though I'd recommend about 4x4 cm.
-
Deep fry in a wok (you know how I love deep frying in one of these babies), drain on paper towel and dust with icing sugar while warm.
- Have a cup of coffee or tea and pat yourself on the back.
