Menemen (Turkish Scrambled Eggs)

Oh my hat, I though scrambled eggs were scrambled eggs, until I tasted these.  I doubt I'll ever go back to the boring version.  As with the other Turkish Breakfast dishes, my version is a compilation of a few others.

2 tbsp Olive Oil
1 tbsp Butter
1 Onion
3 Turkish Peppers (* See note below)
1/2 tsp Paprika
1/4 tsp Cayenne Pepper
1 clove Garlic
4 Large Tomatoes
6 Eggs
Salt & Pepper
Parsley
Bread (ideally Simit (recipe here))
Optional:  Sujuk (see recipe here)

- Heat oil and butter.  Fry the chopped onion & peppers with salt, paprika and cayenne.  Cook about 5 minutes until soft and fragrant.

- Add crushed garlic and fry briefly.  Add the chopped tomatoes and cook for 5 - 15 minutes depending on the juiciness of the tomatoes and how liquidy you want the mixture.

- Whisk the eggs and gently stir into the tomato mixture.  Stir until barely cooked, then remove from the heat.  Serve sprinkled with parsley and slices of Sujuk.

The peppers I used
* As we do not find Turkish peppers in South Africa you can substitute 1 red bell pepper and 1/2 green bell pepper.  Alternatively, which I do, at Spar they sell packs of mini peppers.  They are rather sweet, but look like they would be a spicy pepper.
